Dried Champignon Mushrooms

Dried Champignon: Dried Champignon mushrooms are a dehydrated version of the common white button mushrooms you'll find at the supermarket. They are by far the most popular type of mushroom, and account for about 90% of the mushrooms produced in the US. Outside of the US they are not as popular, but still add up to 40% of the rest of the world's mushroom production. Dried Champignon are an excellent substitute for fresh, they keep well, reconstitute well, and taste and feel the same as fresh. They are especially well suited for soups, stews, gravies and casseroles and other dishes that call for white button mushrooms. Like a little gourmet on your camping trips? Dried mushrooms weigh almost nothing, require no special care, and take up very little space.

We don't think of mushrooms as having a lot of health benefits and they are widely believed to contain little nutritional value, but there is an increasing body of work that suggests some mushroom varieties may have anti-cancer and immune system benefits. A recent study suggests that champignon mushrooms contain phytochemicals that may be very useful for fighting prostate cancer. Generally high in protein and fiber, mushrooms do contain important vitamins and minerals. Along with their other health benefits a diet rich in a variety of mushrooms sounds like a tasty prescription!

Because of their popularity dried champignon mushrooms come in a variety of forms; sliced, powdered, diced... And the non-dried mushrooms are usually avaiable fresh, canned, or on your favorite pizza, steak or burger. As you may have guessed from it's name the champignon mushroom originated in France in the 1700's. Today nearly all of the champignon mushrooms produced in the world are grown commercially on farms. About half of the champignon mushrooms produced in the U.S. come from the southeast corner of Pennsylvania. Portabella and Crimini mushrooms are actually just brown variety's of the same species, Agaricus bisporus, so they work well as substitutes in most dishes and share many of the health benefits of Champignon mushrooms. They also are available dried and in other forms.
